Salmon Omelette
I came across this recipe and had to share it with you.
1 whole egg
3 egg whites
2 tbsp skim milk
Sea Salt and black pepper to taste
1 tbsp red onion, chopped
1/2 cup spinach
Cooking Spray
1 small tomato, chopped
3 oz smoked salmon, shredded
1/2 tsp dried dill weed
1 oz low fat mozzerala (optional)
1. Beat egg, egg whites and skim milk. Add salt and pepper.
2. Saute onions until translucent
3. Pour in egg mixture
4. When omeltte is cooked on one side, flip it over and add cooked onion, spinach, tomato, salmon and dill to half of it.
5. Fold the other half over the top, cook until firm and serve.
