Recipe For This Weekend's Grand Opening

Chicken Taco Salad

3 cups Corn chips broken into pieces

2 cups rice cheddar cheese, or enough to cover salsa on bottom of salad bowl

2 cups salsa (mild - hot depending on taste)or enough to cover bottom of salad bowl

4 cups mixed lettuce, broken in pieces, (enough to layer in bowl)

2 Cups Cooked Chicken (breast is preferable) (organic if possible)

1 cup Kraft reduced fat Ranch Dressing or your preference



*Grill or bake chicken, either plain or with desired spices (i.e. cajun spice)(avoid spices with MSG or Natural Flavor) until cooked. Cut chicken in pieces and set aside

*In bottom of salad bowl, spread Salsa to cover

*Shred cheese if not already shredded and sprinkle over top of salsa. Ensure salsa is covered completely as the cheese will act as a barrier between salsa and corn chips.

*Place broken corn chips overtop of cheese

*Place lettuce overtop of chips

*Place chicken on top of lettuce

*Pour dressing over top of salad

*Enjoy

*Serves 4



NOTE: You may substitute turkey for chicken if you wish.

Sunflower Seeds Make You Fat

My dog Georgia is eating everything right now. She was a bitch for the first 3 months, then good for 7 months and is now back to chewing up everything she possible can.

I mean there has been numerous occasions when I am not even made and mostly just impressed that she thought to chew that. I am sure I proof the room for anything she can get a hold of and she finds plastic things on the corner of the bed frame to tear off, chew into 10,000 pieces and place fairly evenly around the entire room.

She's jumped up and grabbed the blinds and chewed the hell out of the corner when there was nothing else other than toys laying around.

Anyways, last week she tore into a bag of de-shelled sunflower seeds that were left by close to the edge of the counter. Thank god the bag was almost empty and there was only a tiny amount left, maybe 1/10 of the bag. Then I starting thinking about how calorie dense the seeds are and figured she had, in what probably took her about 2 seconds, over 1,200 calories.

I think that there are too many people out there, mostly women, who are trying to lose weight and snack on seeds all day. While I acknowledge the health benefits (healthy fats, Vitamin E and folate) you don't need them to live and you certainly don't need them when you are dieting. They're too dense, you'll end up eating three times what you should at one meal.

With only 1 Tbsp you are already at 100 calories. Last time I saw anyone eat sunflower seeds out of a bag they easily had 3 Tbsp over 300 calories, which is too much if you are eating regular meals on top of that and not accruing for them it in your plan... most do not.

"Back" From Cuba

My head hit the pillow back from Cuba this past Saturday at 3:00am.
Pretty exhausted and glad to be in my own bed once again.

The trip was great, no injuries (expect my nose literally exploding while scuba diving...that's another story) and ate fairly well considering.

Anyone who has been to Cuba knows what I am talking about.

You find 5-7 things you like, stick with them and hope you don't get sick.

made it out for a couple of workouts and they were fantastic. Short, intense and very effective.

When you travel don't set yourself up to fail and try to maintain the same workout program. Who are we kidding, you sleep in an extra 2 hours at least, you're up late drinking rum and beer and the sun takes all your energy.

Keep it simple and quick without trying to make gains.

One of my travelling buddies and I started with a jog on the beach to a catamaran on the beach that looked like a km away. Ended up being 2...it's hard to tell distance down a beach like that.

Then we hit the gym.

He asked "OK what are we going to do for back? There is nothing here."

I pointed to a bar overhead between the cable pulleys and said that we were going to do chinups and nothing else.

He can only do about 8 so when I said you are going to do 60 he thought I was joking.

After about 30 minutes he got them all in by chipping away at them 3-5 at a time and we called it a day. I did a few myself as well.

He thought we should maybe do some more and I convinced him that it was enough.

Needless to say for someone that does not do Chinups regularly he was hurting.

Couldn't straighten his arms for 3 days, back was sore until the day we left and his abs were killing the next day as well, which really surprised him.

He is putting Chinups into his routine now.

Keep it simple and you'll be successful even when you're supposed to be lazing around on a beach somewhere.
